Bat Wing Buffalo Chicken Drumsticks for Two

Total Time 40 minutes
Servings: 2
Calories: 420

Ingredients

  • 6 chicken drumsticks about 1.5 lbs total
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/3 cup buffalo hot sauce
  • 1 tbsp butter
  • 2 tbsp light ranch or blue cheese dressing for serving
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste

Method

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Using a sharp knife, score two shallow diagonal cuts near the meaty end of each drumstick to create a bat-wing fan effect once baked.
  3. Toss the drumsticks with olive oil, garlic powder, smoked paprika, salt, and pepper.
  4. Arrange the drumsticks on the baking sheet, scored side up.
  5. Bake for 30 to 35 minutes, flipping halfway, until golden and the chicken reaches 165°F internally.
  6. While the chicken bakes, warm the buffalo hot sauce and butter together in a small saucepan until the butter melts and the sauce is glossy.
  7. Toss the baked drumsticks in the warm buffalo sauce until well coated.
  8. Arrange the drumsticks on a platter to fan out like bat wings.
  9. Sprinkle with fresh parsley and serve with ranch or blue cheese dressing on the side.

Notes

Chicken drumsticks are one of the cheapest cuts in the poultry aisle, letting this restaurant-style buffalo dinner stay comfortably under $10 for two.
