Method
- Cook the egg noodles according to package instructions, then drain and set aside.
- Season the sliced steak with salt and pepper.
- Heat olive oil in a large skillet over high heat and sear the steak in batches for 1 to 2 minutes until browned, then set aside.
- Add butter to the skillet along with the onion and mushrooms, cooking for 5 to 6 minutes until softened and golden.
- Add the garlic and cook for 30 seconds.
- Sprinkle in the flour and stir for 1 minute to cook out the raw flour taste.
- Pour in the beef broth, stirring to combine, and simmer for 3 to 4 minutes until slightly thickened.
- Reduce the heat to low and stir in the sour cream until smooth.
- Return the steak to the skillet and toss everything together with the cooked egg noodles.
- Sprinkle with fresh parsley and serve immediately.
Notes
Sirloin sliced thin stretches further than a whole steak and sears fast, letting the mushrooms and sour cream sauce do a lot of the flavor and volume work for less money.
