Beef Stroganoff for Two

Ingredients
  

  • 10 oz sirloin steak thinly sliced
  • 6 oz egg noodles
  • 8 oz mushrooms sliced
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1 tbsp flour
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Cook the egg noodles according to package instructions, then drain and set aside.
  2. Season the sliced steak with salt and pepper.
  3. Heat olive oil in a large skillet over high heat and sear the steak in batches for 1 to 2 minutes until browned, then set aside.
  4. Add butter to the skillet along with the onion and mushrooms, cooking for 5 to 6 minutes until softened and golden.
  5. Add the garlic and cook for 30 seconds.
  6. Sprinkle in the flour and stir for 1 minute to cook out the raw flour taste.
  7. Pour in the beef broth, stirring to combine, and simmer for 3 to 4 minutes until slightly thickened.
  8. Reduce the heat to low and stir in the sour cream until smooth.
  9. Return the steak to the skillet and toss everything together with the cooked egg noodles.
  10. Sprinkle with fresh parsley and serve immediately.

Notes

Sirloin sliced thin stretches further than a whole steak and sears fast, letting the mushrooms and sour cream sauce do a lot of the flavor and volume work for less money.
