Black Cat Chocolate Protein Pancakes

Ingredients
  

  • 1/2 cup rolled oats
  • 2 large eggs
  • 1 scoop chocolate protein powder
  • 2 tbsp unsweetened cocoa powder
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp baking powder
  • 2 tbsp plain Greek yogurt for the whiskers
  • 1 tbsp mini white chocolate chips for eyes
  • Pinch of salt

Method
 

  1. Add the rolled oats, eggs, chocolate protein powder, cocoa powder, almond milk, baking powder, and salt to a blender.
  2. Blend until a smooth dark batter forms, about 30 seconds.
  3. Heat a non-stick skillet over medium-low heat.
  4. Pour a small round pancake for the cat's head, then two smaller triangular dollops just above it to form the ears, letting them connect slightly.
  5. Cook 2 to 3 minutes until the edges look set and small bubbles form on the surface.
  6. Carefully flip and cook another 1 to 2 minutes until fully set.
  7. Once plated, place two mini white chocolate chips for eyes.
  8. Spoon the Greek yogurt into a small bag with the corner snipped and pipe on thin whisker lines and a small nose.
  9. Serve warm, decorated and ready for a spooky breakfast.

Notes

A spoonful of leftover Greek yogurt does double duty as both a protein boost and the white whisker decoration, so nothing extra needs to be bought for this look.
