Boo-nana Ghost Protein Pancakes

Ingredients
  

  • 1 ripe banana
  • 1/2 cup rolled oats
  • 2 large eggs
  • 1 scoop vanilla protein powder
  • 1/2 tsp baking powder
  • 1/4 cup unsweetened almond milk
  • 1 tbsp mini dark chocolate chips for decorating
  • Pinch of salt

Method
 

  1. Add the banana, rolled oats, eggs, protein powder, baking powder, almond milk, and salt to a blender.
  2. Blend until a smooth batter forms, about 30 seconds.
  3. Transfer the batter to a squeeze bottle or a zip-top bag with a corner snipped off.
  4. Heat a non-stick skillet over medium-low heat.
  5. Squeeze the batter onto the skillet in a rounded ghost shape, wider at the bottom with two or three wavy points.
  6. Cook 2 to 3 minutes until the edges look set and small bubbles form on the surface.
  7. Carefully flip and cook another 1 to 2 minutes until fully set.
  8. Once plated, use mini chocolate chips to create two eyes and a small round mouth on each ghost pancake.
  9. Serve warm, decorated and ready for a spooky breakfast.
