Candy Corn Stuffed Chicken for Two

Ingredients
  

  • 2 boneless skinless chicken breasts about 12 oz total
  • 1/4 cup roasted red pepper diced
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp cream cheese softened
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Mix the diced roasted red pepper, mozzarella, cream cheese, and garlic powder together in a small bowl.
  3. Season the chicken breasts with Italian seasoning, salt, and pepper, then cut a deep pocket into the side of each.
  4. Stuff each chicken breast with the red pepper and cheese mixture, securing with a toothpick if needed.
  5. Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken for 2 to 3 minutes per side until golden.
  6. Transfer the skillet to the oven and bake for 18 to 20 minutes until the chicken reaches 165°F internally.
  7. Let rest for 5 minutes before slicing each breast crosswise to reveal the orange, white, and yellow layers inside, resembling candy corn.
  8. Serve immediately.

Notes

Roasted red peppers from a jar are inexpensive and provide that vibrant orange color instantly, without needing to roast fresh peppers yourself.
