- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Mix the diced roasted red pepper, mozzarella, cream cheese, and garlic powder together in a small bowl.
- Season the chicken breasts with Italian seasoning, salt, and pepper, then cut a deep pocket into the side of each.
- Stuff each chicken breast with the red pepper and cheese mixture, securing with a toothpick if needed.
- Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken for 2 to 3 minutes per side until golden.
- Transfer the skillet to the oven and bake for 18 to 20 minutes until the chicken reaches 165°F internally.
- Let rest for 5 minutes before slicing each breast crosswise to reveal the orange, white, and yellow layers inside, resembling candy corn.
- Serve immediately.

Roasted red peppers from a jar are inexpensive and provide that vibrant orange color instantly, without needing to roast fresh peppers yourself.
