Chicken Caesar Pasta Salad

Ingredients
  

  • 5 oz boneless skinless chicken breast diced
  • 1 cup cooked whole wheat pasta
  • 1 cup chopped romaine lettuce
  • 2 tbsp grated parmesan cheese
  • 2 tbsp Caesar dressing
  • 1 tsp olive oil
  • Salt and pepper to taste
  • 1 tbsp croutons optional

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the diced chicken with salt and pepper.
  3. Cook the chicken for 6 to 7 minutes until golden and cooked through.
  4. Let the chicken cool slightly.
  5. Add the cooked pasta and chopped romaine to a large bowl.
  6. Add the cooked chicken on top.
  7. Drizzle with Caesar dressing and toss to coat evenly.
  8. Sprinkle with grated parmesan cheese and croutons if using.
  9. Serve immediately, or chill for a cold pasta salad.

Notes

Cook extra pasta whenever you make it for dinner and store the leftovers — having pre-cooked pasta on hand makes lunches like this one come together in under 10 minutes.
