- Season the chicken breasts with salt, pepper, and Italian seasoning.

- Add the minced garlic to the skillet and cook for 30 seconds until fragrant.

- Add the sun-dried tomatoes and simmer for 3 minutes.
- Stir in the spinach and parmesan cheese until the spinach wilts and the sauce thickens slightly.
- Return the chicken to the skillet, spooning the sauce generously over the top.
- Simmer for 2 minutes until heated through.
- Slice the chicken and plate with sauce spooned over each serving.
