- Crack the eggs into a bowl and whisk thoroughly until fully combined and slightly frothy.
- Add the cottage cheese and a pinch of salt and pepper. Stir to combine — small cottage cheese curds are fine.
- Heat a non-stick skillet over medium-low heat. Add the butter and let it melt without browning.
- Pour the egg and cottage cheese mixture into the pan. Let it sit undisturbed for 20–30 seconds until the edges just begin to set.
- Using a spatula, gently fold the eggs from the outside inward in slow, deliberate strokes.
- Continue folding every 20–30 seconds over medium-low heat. The cottage cheese will melt into the eggs as they cook.
- Remove from heat when the eggs are still slightly underdone — they will finish from residual heat.
- Pile immediately onto the toasted bread.
- Dust generously with everything bagel seasoning.
- Add avocado on the side and hot sauce if using. Serve immediately.
Notes
Everything bagel seasoning is available in most grocery stores for around three dollars a jar and lasts for months — it replaces four to five separate spices in one shake and adds meaningful flavour to eggs, avocado toast, salads, and roasted vegetables. A large tub of cottage cheese used across multiple breakfast and smoothie recipes throughout the week brings the per-serving protein cost down to almost nothing compared to buying individual protein sources separately.
