Frankenstein Green Protein Pancakes

Ingredients
  

  • 1/2 cup rolled oats
  • 2 large eggs
  • 1 scoop vanilla protein powder
  • 1/2 cup fresh spinach
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 2 tbsp mini dark chocolate chips for decorating
  • Pinch of salt

Method
 

  1. Add the rolled oats, eggs, protein powder, spinach, almond milk, baking powder, vanilla extract, and salt to a blender.
  2. Blend until completely smooth and green, about 45 seconds, making sure no spinach flecks remain visible.
  3. Heat a non-stick skillet over medium heat.
  4. Pour 1/4 cup portions of batter onto the skillet.
  5. Cook 2 to 3 minutes per side until set and small bubbles form on the surface.
  6. Flip and cook another 2 minutes until fully set.
  7. Once plated, arrange mini chocolate chips on top of each pancake to form Frankenstein's monster eyes and stitched mouth.
  8. Serve warm, decorated and ready for a spooky breakfast.

Notes

A single handful of spinach blends completely into the batter and adds no detectable flavor, so the green color comes at almost no extra cost.
