Frankenstein Green Protein Popsicles

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 1/2 cup fresh spinach
  • 2 tbsp honey
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1 tbsp mini dark chocolate chips for decorating
  • Pinch of salt

Method
 

  1. Add the Greek yogurt, protein powder, spinach, honey, almond milk, vanilla extract, and salt to a blender.
  2. Blend until completely smooth and vibrant green, making sure no spinach flecks remain visible.
  3. Pour the mixture into popsicle molds, leaving a little room at the top.
  4. While the mixture is still soft, press a few mini chocolate chips into the top portion of each mold to create Frankenstein-style eyes and stitches.
  5. Insert popsicle sticks and freeze for at least 4 hours, or until fully solid.
  6. Run the molds under warm water briefly to release the popsicles.
  7. Serve immediately, or store in the freezer.

Notes

A handful of spinach blends completely into the mixture, so the eerie green color adds essentially no cost while sneaking in some extra greens.
