- The night before: peel the bananas, slice into coins, and lay flat on a parchment-lined plate or tray. Freeze overnight until completely solid.
- Add the frozen banana slices to a blender or food processor.
- Add the peanut butter, vanilla extract, and pinch of salt.
- Blend on high, stopping to scrape down the sides every 20–30 seconds. The banana will go through a crumbly stage before becoming smooth and creamy — keep blending.
- If the blender struggles, add milk one tablespoon at a time — use as little as possible to keep it thick.
- Blend until completely smooth and creamy, about 2–3 minutes total blending time.
- Serve immediately for a soft-serve texture, or freeze for 30 minutes for a firmer scoop.
- Top with honey, mini chocolate chips, or a dusting of cinnamon if using.

This recipe is built on bananas that are fully ripe or even overripe, which grocery stores regularly discount significantly. Buying a bunch of ripe bananas on markdown, slicing and freezing them immediately, and using them for nice cream and smoothies throughout the week is one of the most effective budget strategies for healthy eating. The riper the banana the sweeter the nice cream, meaning no added sugar is ever needed.
