Ingredients
  

  • 2 boneless skinless chicken breasts about 12 oz total
  • 8 oz mushrooms sliced
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 2 tbsp butter divided
  • 1 tbsp flour
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Pound the chicken breasts to an even, round-ish thickness to resemble a full moon shape.
  2. Season the chicken with thyme, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 4 to 5 minutes per side until golden and cooked through, then set aside.
  4. Add 1 tablespoon butter to the same skillet along with the sliced mushrooms.
  5. Cook the mushrooms for 5 to 6 minutes until deeply browned.
  6. Add the garlic and cook for 30 seconds until fragrant.
  7. Sprinkle in the flour and stir for 1 minute.
  8. Slowly pour in the beef broth, stirring constantly, and simmer for 4 to 5 minutes until the dark, glossy gravy thickens.
  9. Stir in the remaining butter until smooth.
  10. Plate the round chicken breasts and spoon the dark mushroom gravy generously over the top like a night sky.
  11. Sprinkle with fresh parsley and serve immediately.
