Garlic Butter Shrimp & Vegetable Stir Fry

Ingredients
  

  • 6 oz frozen shrimp peeled and deveined, thawed
  • 1 cup broccoli florets
  • 1/2 cup sliced bell pepper
  • 1/2 cup snap peas
  • 2 cloves garlic minced
  • 1 tbsp butter
  • 1 tbsp soy sauce
  • 1/2 cup cooked white rice
  • 1/2 tsp red pepper flakes optional
  • Salt and pepper to taste

Method
 

  1. Pat the thawed shrimp dry and season with salt and pepper.
  2. Heat butter in a large skillet over medium-high heat.
  3. Add the shrimp and cook for 1 to 2 minutes per side until pink and opaque.
  4. Remove the shrimp from the skillet and set aside.
  5. Add the broccoli, bell pepper, and snap peas to the same skillet.
  6. Stir-fry the vegetables for 4 to 5 minutes until crisp-tender.
  7. Add the minced garlic and red pepper flakes if using, cooking for 30 seconds.
  8. Return the shrimp to the skillet and add the soy sauce.
  9. Toss everything together until well combined and heated through.
  10. Serve over the cooked white rice.

Notes

Frozen shrimp is significantly cheaper than fresh and just as flavorful once thawed — buy a large bag and portion it out for stir fries all month.
