Ingredients
  

  • 6 oz lean ground turkey
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup onion diced
  • 1 clove garlic minced
  • 1/2 cup diced tomatoes
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced onion and minced garlic, cooking for 2 minutes until fragrant.
  3. Add the ground turkey, breaking it apart with a spatula as it cooks.
  4. Cook until the turkey is fully browned, about 5 minutes.
  5. Stir in the black beans, corn, and diced tomatoes.
  6. Season with chili powder, cumin, salt, and pepper.
  7. Simmer for 5 minutes until everything is heated through.
  8. Sprinkle shredded cheddar cheese over the top and let it melt.
  9. Serve hot straight from the skillet.

Ground turkey often costs less than beef per pound and cooks up just as satisfying in a taco skillet — buy it in bulk when on sale and portion it into freezer bags for future dinners.
