Herb Butter Salmon with Garlic Mashed Potatoes for Two

Ingredients
  

  • 2 salmon fillets about 6 oz each
  • 1.5 lbs potatoes peeled and cubed
  • 4 tbsp butter divided
  • 1/4 cup milk
  • 3 cloves garlic minced, divided
  • 1 tbsp fresh parsley chopped
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Place the cubed potatoes in a pot of salted water and bring to a boil.
  2. Cook for 12 to 15 minutes until fork-tender, then drain.
  3. Mash the potatoes with 2 tablespoons of butter, milk, 1 clove of minced garlic, salt, and pepper until smooth.
  4. While the potatoes cook, season the salmon fillets with salt and pepper.
  5. Heat olive oil in a skillet over medium-high heat and sear the salmon skin-side up for 3 to 4 minutes until golden.
  6. Flip the salmon and cook for another 3 to 4 minutes until it flakes easily.
  7. In the last minute, add the remaining butter, garlic, and lemon juice to the skillet, spooning the herb butter over the salmon as it finishes.
  8. Sprinkle with fresh parsley.
  9. Plate the salmon alongside the garlic mashed potatoes and spoon any extra herb butter over the top.

Notes

A large bag of potatoes makes mashed potatoes for pennies per serving, letting the salmon be the star of the budget without the sides adding much extra cost.
