- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Season the chicken thighs with garlic powder, smoked paprika, thyme, salt, and pepper.
- Place the chicken thighs on the baking sheet and drizzle with half the olive oil.
- Toss the green beans with the remaining olive oil, salt, and pepper, and add them to the other side of the sheet.
- Bake for 22 to 25 minutes until the chicken reaches 165°F internally and the green beans are tender.
- Let the chicken rest for 5 minutes, then slice if desired.
- Divide the rice, chicken, and green beans into a meal prep container.
- Serve warm, or store for later in the week.
