- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Toss the diced sweet potato with half the olive oil, salt, and pepper, spreading it on the baking sheet.
- Roast for 12 minutes.
- Season the cod fillet with garlic powder, smoked paprika, salt, and pepper, and drizzle with the remaining olive oil.
- Add the cod and green beans to the baking sheet with the sweet potato.
- Bake for an additional 12 to 15 minutes until the cod flakes easily and the sweet potato is fork-tender.
- Drizzle the lemon juice over the cod right after removing from the oven.
- Divide the cod, sweet potato, and green beans into a meal prep container.
- Serve warm, or store for later in the week.
