High-Protein Baked Salmon & Asparagus Meal Prep Bowl

Ingredients
  

  • 6 oz salmon fillet
  • 1 cup asparagus trimmed and cut into 2-inch pieces
  • 1/2 cup cooked quinoa
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Place the salmon fillet and asparagus on the baking sheet.
  3. Drizzle both with olive oil and sprinkle with minced garlic, lemon zest, salt, and pepper.
  4. Bake for 12 to 15 minutes until the salmon flakes easily with a fork and the asparagus is tender.
  5. Drizzle the lemon juice over the salmon and asparagus right after removing from the oven.
  6. Spoon the cooked quinoa into a meal prep container.
  7. Top with the baked salmon and roasted asparagus.
  8. Serve warm, or store for later in the week.

Buy salmon fillets when they're on sale or as a larger family pack and portion them into 6-ounce servings for the freezer, keeping this meal prep dinner reliably under $5.
