High-Protein Beef Taco Meal Prep Bowl

Ingredients
  

  • 6 oz lean ground beef
  • 1/2 cup cooked white rice
  • 1/2 cup black beans drained and rinsed
  • 1/4 cup corn kernels
  • 1/4 cup diced tomato
  • 1 tsp taco seasoning
  • 1 tbsp olive oil
  • 2 tbsp shredded cheddar cheese
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add the ground beef, breaking it apart as it cooks, until browned, about 6 minutes.
  3. Drain any excess fat and stir in the taco seasoning along with a splash of water.
  4. Simmer for 2 to 3 minutes until the seasoning coats the beef evenly.
  5. Stir in the black beans and corn, warming through for 2 minutes.
  6. Season with salt and pepper to taste.
  7. Divide the rice into a meal prep container.
  8. Top with the seasoned beef mixture, diced tomato, and shredded cheddar cheese.
  9. Serve warm, or store for later in the week.

Notes

A single packet of taco seasoning, or a homemade blend of chili powder and cumin, flavors an entire batch of ground beef for pennies compared to pre-seasoned meat.
