- Heat olive oil in a skillet over medium heat.
- Add the ground beef, breaking it apart as it cooks, until browned, about 6 minutes.
- Drain any excess fat and stir in the taco seasoning along with a splash of water.
- Simmer for 2 to 3 minutes until the seasoning coats the beef evenly.
- Stir in the black beans and corn, warming through for 2 minutes.
- Season with salt and pepper to taste.
- Divide the rice into a meal prep container.
- Top with the seasoned beef mixture, diced tomato, and shredded cheddar cheese.
- Serve warm, or store for later in the week.
Notes
