High-Protein Buffalo Chicken & Rice Meal Prep Bowl

Ingredients
  

  • 6 oz boneless skinless chicken breast diced
  • 1/2 cup cooked white rice
  • 1 cup broccoli florets
  • 2 tbsp buffalo hot sauce
  • 1 tsp olive oil
  • 1 tbsp light ranch or blue cheese dressing for topping
  • 1 tbsp shredded cheddar cheese
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the diced chicken with salt and pepper.
  3. Cook the chicken for 6 to 7 minutes until golden and cooked through.
  4. Toss the cooked chicken with the buffalo hot sauce while still warm.
  5. Steam the broccoli florets for 4 to 5 minutes until tender.
  6. Spoon the cooked rice into a meal prep container.
  7. Top with the buffalo chicken and steamed broccoli.
  8. Sprinkle with shredded cheddar cheese.
  9. Serve warm, or store for later in the week, adding the ranch or blue cheese drizzle just before eating.
