High-Protein Ground Beef & Broccoli Meal Prep Bowl

Ingredients
  

  • 6 oz lean ground beef
  • 1.5 cups broccoli florets
  • 1/2 cup cooked brown rice
  • 1 clove garlic minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger
  • 1 tsp olive oil
  • 1 tsp sesame seeds optional
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add the ground beef, breaking it apart as it cooks, until browned, about 6 minutes.
  3. Drain any excess fat, then add the minced garlic and ground ginger, stirring for 30 seconds.
  4. Add the broccoli florets and a splash of water, covering to steam for 4 to 5 minutes until tender.
  5. Stir in the soy sauce and sesame oil, tossing everything together.
  6. Season with salt and pepper to taste.
  7. Divide the cooked brown rice into a meal prep container.
  8. Top with the beef and broccoli mixture and sprinkle with sesame seeds if using.
  9. Serve warm, or store for later in the week.
