- Heat olive oil in a skillet over medium-high heat.
- Add the ground beef, breaking it apart as it cooks, until browned, about 6 minutes.
- Drain any excess fat, then add the minced garlic and ground ginger, stirring for 30 seconds.
- Add the broccoli florets and a splash of water, covering to steam for 4 to 5 minutes until tender.
- Stir in the soy sauce and sesame oil, tossing everything together.
- Season with salt and pepper to taste.
- Divide the cooked brown rice into a meal prep container.
- Top with the beef and broccoli mixture and sprinkle with sesame seeds if using.
- Serve warm, or store for later in the week.
