High-Protein Monster Eyeball Turkey Meatball & Marinara Meal Prep Bowl

Ingredients
  

  • 6 oz lean ground turkey
  • 2 tbsp breadcrumbs
  • 1 tbsp grated parmesan cheese
  • 1/2 large egg lightly beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1 cup marinara sauce
  • 2 small mozzarella balls bocconcini, halved
  • 4 small black olive slices for pupils
  • 1/2 cup cooked whole wheat pasta or zucchini noodles
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, combine ground turkey, breadcrumbs, parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
  3. Roll the mixture into 4 to 5 round meatballs and place on the baking sheet, drizzling with olive oil.
  4. Bake for 15 to 18 minutes until cooked through.
  5. Warm the marinara sauce in a small saucepan over low heat.
  6. Press a halved mozzarella ball onto the top of each baked meatball, then place a small olive slice in the center of the mozzarella to create a monster eyeball.
  7. Return the meatballs to the warm oven for 1 to 2 minutes just until the mozzarella softens slightly.
  8. Divide the pasta or zucchini noodles into a meal prep container.
  9. Top with the warm marinara sauce and the eyeball meatballs.
  10. Serve warm, or store for later in the week.

Notes

A small bag of mozzarella bocconcini balls is inexpensive and creates the eyeball effect on multiple meatballs, so the whole spooky presentation adds very little to the base cost.
