  • 3 large eggs
  • 60 grams cottage cheese low-fat
  • 1 whole grain bread slices
  • 1 teaspoons butter
  • 0.3 teaspoons salt
  • 0.3 teaspoons black pepper
  • 1 tablespoons fresh chives optional

Method
 

  1. Toast the bread: Toast 1 whole grain bread slices to your liking and set aside.
  2. Whisk the eggs: Crack 3 large eggs into a bowl, add 0.3 teaspoons salt and 0.3 teaspoons black pepper, and whisk until fully combined.
  3. Scramble the eggs: Melt 1 teaspoons butter in a non-stick pan over medium-low heat. Pour in the eggs and gently fold with a spatula until just set — don't overcook.
  4. Assemble: Spread 60 grams cottage cheese (low-fat) generously over the toast. Top with scrambled eggs and garnish with 1 tablespoons fresh chives (optional) if using. Serve immediately.
