- Pat the shrimp dry and toss with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
- Heat a large skillet over medium-high heat and cook the shrimp for 2-3 minutes per side, until pink and opaque. Remove from heat.
- In the same skillet, quickly sauté the bell pepper and corn for 3-4 minutes until slightly softened.
- Warm the black beans in a small pot or the microwave.
- Divide the cooked rice evenly among 4 meal prep containers.
- Top each with black beans, the corn and pepper mixture, and the cooked shrimp.
- Squeeze fresh lime juice over each bowl and sprinkle with cilantro.
- Let cool slightly before sealing containers and refrigerating for up to 4 days.
Notes
Buy frozen shrimp in a large bag instead of fresh from the seafood counter — it's significantly cheaper per pound and thaws quickly under cold water, keeping this high-protein bowl under $5 a serving.
