High-Protein Shrimp & Black Bean Meal Prep Bowl

Ingredients
  

  • 1 lb raw shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1 1/2 cups cooked white or brown rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • Juice of 1 lime
  • Fresh cilantro chopped, for topping

Method
 

  1. Pat the shrimp dry and toss with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
  2. Heat a large skillet over medium-high heat and cook the shrimp for 2-3 minutes per side, until pink and opaque. Remove from heat.
  3. In the same skillet, quickly sauté the bell pepper and corn for 3-4 minutes until slightly softened.
  4. Warm the black beans in a small pot or the microwave.
  5. Divide the cooked rice evenly among 4 meal prep containers.
  6. Top each with black beans, the corn and pepper mixture, and the cooked shrimp.
  7. Squeeze fresh lime juice over each bowl and sprinkle with cilantro.
  8. Let cool slightly before sealing containers and refrigerating for up to 4 days.

Notes

Buy frozen shrimp in a large bag instead of fresh from the seafood counter — it's significantly cheaper per pound and thaws quickly under cold water, keeping this high-protein bowl under $5 a serving.
