Method
- Preheat the oven to 400°F.
- Season the chicken breast with garlic powder, smoked paprika, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat and sear the chicken for 2 to 3 minutes per side until golden.
- Transfer the skillet to the oven and bake for 12 to 15 minutes until the chicken reaches 165°F internally.
- Meanwhile, steam the broccoli florets for 4 to 5 minutes until tender.
- Let the chicken rest for 5 minutes, then slice.
- In a small bowl, thin the Greek yogurt with a splash of water until pourable, then transfer to a small piping bag or zip-top bag with the corner snipped.
- Divide the quinoa, sliced chicken, and broccoli into a meal prep container.
- Pipe the yogurt in a spiral over the chicken, then drag a toothpick from the center outward in a few spots to create a spiderweb design.
- Dot the buffalo sauce in small drops around the web and place the olive slice in the center to look like a spider.
- Serve warm, or store for later in the week.
Notes
The spiderweb design uses just a spoonful of Greek yogurt and hot sauce, so the entire spooky presentation adds almost nothing to the cost of the base recipe.
