High-Protein Turkey Chili Meal Prep Bowl

Ingredients
  

  • 6 oz lean ground turkey
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup kidney beans drained and rinsed
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onion
  • 1 clove garlic minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Add the diced onion and garlic, cooking for 2 minutes until fragrant.
  3. Add the ground turkey, breaking it apart as it cooks, until browned, about 5 minutes.
  4. Stir in the black beans, kidney beans, and diced tomatoes.
  5. Season with chili powder, cumin, smoked paprika, salt, and pepper.
  6. Simmer for 20 minutes, stirring occasionally, until thickened.
  7. Let cool slightly.
  8. Divide into a meal prep container.
  9. Serve warm, or store for later in the week.

Notes

Canned beans and diced tomatoes are some of the cheapest ingredients in the grocery store, and this chili scales up easily if you want to double the batch for even more meal prep servings.
