High-Protein Turkey & Green Bean Casserole-Inspired Meal Prep Bowl

Ingredients
  

  • 6 oz turkey breast sliced
  • 1.5 cups green beans trimmed
  • 1/2 cup sliced mushrooms
  • 1/2 cup cooked brown rice
  • 1/4 cup chicken broth
  • 2 tbsp plain Greek yogurt
  • 1/2 tsp garlic powder
  • 1 tbsp crispy fried onions for topping
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Season the turkey breast with garlic powder, salt, and pepper.
  2. Heat half the olive oil in a skillet over medium-high heat and sear the turkey for 3 to 4 minutes per side until cooked through, then slice.
  3. In the same skillet, add the remaining olive oil and sliced mushrooms, cooking for 4 to 5 minutes until golden.
  4. Add the green beans and chicken broth, covering and steaming for 4 to 5 minutes until tender.
  5. Stir in the Greek yogurt off the heat to create a light, creamy sauce coating the beans and mushrooms.
  6. Divide the brown rice, sliced turkey, and creamy green bean mixture into a meal prep container.
  7. Top with a sprinkle of crispy fried onions just before serving.
  8. Serve warm, or store for later in the week, adding the fried onions fresh at serving time.

Notes

A small container of crispy fried onions goes a long way as a topping, and buying green beans and mushrooms fresh in season keeps this dish affordable.
