- Season the turkey breast with garlic powder, salt, and pepper.
- Heat half the olive oil in a skillet over medium-high heat and sear the turkey for 3 to 4 minutes per side until cooked through, then slice.
- In the same skillet, add the remaining olive oil and sliced mushrooms, cooking for 4 to 5 minutes until golden.
- Add the green beans and chicken broth, covering and steaming for 4 to 5 minutes until tender.
- Stir in the Greek yogurt off the heat to create a light, creamy sauce coating the beans and mushrooms.
- Divide the brown rice, sliced turkey, and creamy green bean mixture into a meal prep container.
- Top with a sprinkle of crispy fried onions just before serving.
- Serve warm, or store for later in the week, adding the fried onions fresh at serving time.
Notes
A small container of crispy fried onions goes a long way as a topping, and buying green beans and mushrooms fresh in season keeps this dish affordable.
