Ingredients
  

  • 6 oz turkey breast sliced
  • 1.5 cups potatoes peeled and cubed
  • 2 tbsp butter divided
  • 2 tbsp milk
  • 1/2 cup chicken broth
  • 1 tsp flour
  • 1/2 tsp dried sage
  • 1 cup green beans trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Place the cubed potatoes in a pot of salted water and bring to a boil.
  2. Cook for 12 to 15 minutes until fork-tender, then drain.
  3. Mash the potatoes with 1 tablespoon butter, milk, salt, and pepper until smooth.
  4. Season the turkey breast with sage, salt, and pepper.
  5. Heat olive oil in a skillet over medium-high heat and sear the turkey for 3 to 4 minutes per side until cooked through, then set aside and slice.
  6. In the same skillet, melt the remaining butter and whisk in the flour, cooking for 1 minute.
  7. Slowly whisk in the chicken broth, simmering for 3 to 4 minutes until the gravy thickens slightly.
  8. Steam the green beans for 4 to 5 minutes until tender.
  9. Divide the mashed potatoes, sliced turkey, and green beans into a meal prep container.
  10. Spoon the gravy over the turkey and mashed potatoes just before eating.

A simple homemade gravy from broth, butter, and flour costs a fraction of pre-made gravy packets while tasting noticeably fresher.
