High-Protein Turkey Meatball & Sweet Potato Meal Prep Bowl

Ingredients
  

  • 6 oz lean ground turkey
  • 2 tbsp breadcrumbs
  • 1 tbsp grated parmesan cheese
  • 1/2 large egg lightly beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1 medium sweet potato diced
  • 1 cup green beans trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, combine ground turkey, breadcrumbs, parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
  3. Mix gently and roll into 5 to 6 meatballs, placing them on one side of the baking sheet.
  4. Toss the diced sweet potato with half the olive oil, salt, and pepper, spreading it on the other side of the sheet.
  5. Bake for 18 to 20 minutes, adding the green beans tossed with the remaining olive oil to the sheet for the final 8 minutes.
  6. Check that the meatballs are cooked through and the sweet potato is fork-tender.
  7. Let everything cool slightly.
  8. Divide the meatballs, sweet potato, and green beans into a meal prep container.
  9. Serve warm, or store for later in the week.

Notes

Bake the meatballs and vegetables on the same sheet pan to save on both time and energy — one oven cycle covers the entire meal prep dinner.
