High-Protein Turkey Meatloaf Muffins with Cranberry Glaze Meal Prep Bowl

Ingredients
  

  • 6 oz lean ground turkey
  • 2 tbsp breadcrumbs
  • 1 tbsp grated parmesan cheese
  • 1/2 large egg lightly beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp dried sage
  • 3 tbsp cranberry sauce divided
  • 1/2 cup mashed sweet potato
  • 1 cup green beans trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F and lightly grease 2 to 3 cups of a muffin tin.
  2. In a bowl, combine ground turkey, breadcrumbs, parmesan, egg, garlic powder, sage, 1 tablespoon cranberry sauce, salt, and pepper.
  3. Divide the mixture evenly among the greased muffin cups, pressing down gently.
  4. Spoon the remaining cranberry sauce evenly over the top of each meatloaf muffin.
  5. Bake for 22 to 25 minutes until the turkey is cooked through and the glaze is slightly caramelized.
  6. Meanwhile, steam the green beans for 4 to 5 minutes until tender.
  7. Let the meatloaf muffins cool slightly before removing from the tin.
  8. Divide the mashed sweet potato, meatloaf muffins, and green beans into a meal prep container.
  9. Serve warm, or store for later in the week.

Notes

Baking the meatloaf mixture in muffin cups portions everything out automatically and cuts the cooking time significantly compared to a full loaf.
