- Preheat the oven to 375°F and lightly grease 2 to 3 cups of a muffin tin.
- In a bowl, combine ground turkey, breadcrumbs, parmesan, egg, garlic powder, sage, 1 tablespoon cranberry sauce, salt, and pepper.
- Divide the mixture evenly among the greased muffin cups, pressing down gently.
- Spoon the remaining cranberry sauce evenly over the top of each meatloaf muffin.
- Bake for 22 to 25 minutes until the turkey is cooked through and the glaze is slightly caramelized.
- Meanwhile, steam the green beans for 4 to 5 minutes until tender.
- Let the meatloaf muffins cool slightly before removing from the tin.
- Divide the mashed sweet potato, meatloaf muffins, and green beans into a meal prep container.
- Serve warm, or store for later in the week.
Notes
Baking the meatloaf mixture in muffin cups portions everything out automatically and cuts the cooking time significantly compared to a full loaf.
