High-Protein Turkey & Stuffing-Inspired Meal Prep Bowl

Ingredients
  

  • 6 oz lean ground turkey
  • 1 cup whole wheat bread cubed and lightly toasted
  • 1/4 cup diced celery
  • 1/4 cup diced onion
  • 1/2 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 cup green beans trimmed
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced celery and onion, cooking for 3 to 4 minutes until softened.
  3. Add the ground turkey, breaking it apart as it cooks, until browned, about 6 minutes.
  4. Stir in the sage, thyme, salt, and pepper.
  5. Add the toasted bread cubes and chicken broth, stirring gently to combine and let the bread soak up the broth for 2 to 3 minutes.
  6. Steam the green beans for 4 to 5 minutes until tender.
  7. Divide the turkey stuffing mixture and green beans into a meal prep container.
  8. Serve warm, or store for later in the week.

Notes

Day-old or slightly stale whole wheat bread works even better here than fresh, so this is a great way to use up bread that's about to go to waste.
