- Heat olive oil in a skillet over medium heat.
- Add the diced celery and onion, cooking for 3 to 4 minutes until softened.
- Add the ground turkey, breaking it apart as it cooks, until browned, about 6 minutes.
- Stir in the sage, thyme, salt, and pepper.
- Add the toasted bread cubes and chicken broth, stirring gently to combine and let the bread soak up the broth for 2 to 3 minutes.
- Steam the green beans for 4 to 5 minutes until tender.
- Divide the turkey stuffing mixture and green beans into a meal prep container.
- Serve warm, or store for later in the week.
Notes
Day-old or slightly stale whole wheat bread works even better here than fresh, so this is a great way to use up bread that's about to go to waste.
