Method
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Toss the diced sweet potato with half the olive oil, salt, and pepper, spreading it on the baking sheet.
- Roast for 12 minutes.
- Season the turkey breast with sage, thyme, salt, and pepper, and drizzle with the remaining olive oil.
- Add the turkey and green beans to the baking sheet with the sweet potato.
- Bake for an additional 15 to 18 minutes until the turkey reaches 165°F internally and the sweet potato is fork-tender.
- Let the turkey rest for 5 minutes, then slice.
- Divide the turkey, sweet potato, and green beans into a meal prep container.
- Sprinkle the dried cranberries over the top.
- Serve warm, or store for later in the week.
Notes
A small bag of dried cranberries goes a long way, with just a spoonful per serving bringing genuine Thanksgiving flavor for only a few cents per bowl.
