High-Protein Turkey, Sweet Potato & Cranberry Meal Prep Bowl

Ingredients
  

  • 6 oz turkey breast sliced
  • 1 medium sweet potato diced
  • 1 cup green beans trimmed
  • 2 tbsp dried cranberries
  • 1 tbsp olive oil
  • 1/2 tsp dried sage
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Toss the diced sweet potato with half the olive oil, salt, and pepper, spreading it on the baking sheet.
  3. Roast for 12 minutes.
  4. Season the turkey breast with sage, thyme, salt, and pepper, and drizzle with the remaining olive oil.
  5. Add the turkey and green beans to the baking sheet with the sweet potato.
  6. Bake for an additional 15 to 18 minutes until the turkey reaches 165°F internally and the sweet potato is fork-tender.
  7. Let the turkey rest for 5 minutes, then slice.
  8. Divide the turkey, sweet potato, and green beans into a meal prep container.
  9. Sprinkle the dried cranberries over the top.
  10. Serve warm, or store for later in the week.

Notes

A small bag of dried cranberries goes a long way, with just a spoonful per serving bringing genuine Thanksgiving flavor for only a few cents per bowl.
