Honey Garlic Chicken Thighs with Roasted Vegetables

Ingredients
  

  • 2 boneless skinless chicken thighs about 6 oz
  • 1 cup broccoli florets
  • 1 cup diced zucchini
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F.
  2. Toss broccoli and zucchini with 1/2 tablespoon olive oil, salt, and pepper on a baking sheet.
  3. Roast the vegetables for 15 minutes.
  4. Meanwhile, whisk together honey, soy sauce, garlic, and smoked paprika in a small bowl.
  5. Season chicken thighs with salt and pepper.
  6. Heat remaining olive oil in an oven-safe skillet over medium-high heat.
  7. Sear the chicken thighs for 2 to 3 minutes per side until browned.
  8. Pour the honey garlic sauce over the chicken.
  9. Transfer the skillet to the oven and roast alongside the vegetables for 12 to 15 minutes until chicken reaches 165°F internally.
  10. Plate the chicken with the roasted vegetables and spoon any pan sauce over the top.

Notes

Boneless chicken thighs are usually cheaper per pound than chicken breast and stay juicier when roasted — a smart swap for both flavor and your grocery bill.
