- In a large bowl, whisk together the oat flour, protein powder, baking powder, and salt.
- In a separate bowl, whisk the eggs, milk, honey, lemon juice, and lemon zest until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.
- Gently fold in the blueberries, reserving a few for topping.
- Heat a nonstick skillet over medium-low heat and lightly grease with butter or oil.
- Pour 1/4 cup portions of batter onto the skillet and cook 2-3 minutes per side, until golden and bubbles form on the surface.
- Flip and cook another 2 minutes until cooked through.
- Stack the pancakes, top with reserved blueberries, and serve warm.
Notes
Buy blueberries frozen instead of fresh — they're often half the price and work just as well folded into batter, keeping this stack well under $5 per serving.
