Lemon Blueberry Protein Pancakes

Ingredients
  

  • 1 cup old-fashioned oats blended into flour
  • 1 scoop about 30g vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup low-fat milk
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2/3 cup fresh or frozen blueberries
  • 1 tsp butter or oil for the pan

Method
 

  1. In a large bowl, whisk together the oat flour, protein powder, baking powder, and salt.
  2. In a separate bowl, whisk the eggs, milk, honey, lemon juice, and lemon zest until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.
  4. Gently fold in the blueberries, reserving a few for topping.
  5. Heat a nonstick skillet over medium-low heat and lightly grease with butter or oil.
  6. Pour 1/4 cup portions of batter onto the skillet and cook 2-3 minutes per side, until golden and bubbles form on the surface.
  7. Flip and cook another 2 minutes until cooked through.
  8. Stack the pancakes, top with reserved blueberries, and serve warm.

Notes

Buy blueberries frozen instead of fresh — they're often half the price and work just as well folded into batter, keeping this stack well under $5 per serving.
