Method
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Mix the chopped spinach, mozzarella, cream cheese, and garlic together in a small bowl.
- Season the chicken breasts with salt and pepper, then cut a pocket into the side of each.
- Stuff each chicken breast with the spinach and cheese mixture, securing with a toothpick if needed.
- Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken for 2 minutes per side until lightly golden.
- Slice the puff pastry sheet into thin strips.
- Wrap the pastry strips around each chicken breast in a crisscross pattern, mummy-style, leaving a small gap near the top for the eyes.
- Brush the pastry with egg wash and press two small olive slices into the gap to create the mummy's eyes.
- Bake for 20 to 22 minutes until the pastry is golden and the chicken reaches 165°F internally.
- Let rest for 5 minutes before serving.
Notes
One sheet of puff pastry wraps both chicken breasts, so the spooky presentation costs barely more than a plain stuffed chicken dinner would.
