Mummy-Wrapped Stuffed Chicken for Two

Ingredients
  

  • 2 boneless skinless chicken breasts about 12 oz total
  • 1/2 cup fresh spinach chopped
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp cream cheese softened
  • 1 clove garlic minced
  • 1 sheet puff pastry thawed
  • 1 egg beaten, for egg wash
  • 1 tbsp olive oil
  • 2 small black olive slices for eyes
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Mix the chopped spinach, mozzarella, cream cheese, and garlic together in a small bowl.
  3. Season the chicken breasts with salt and pepper, then cut a pocket into the side of each.
  4. Stuff each chicken breast with the spinach and cheese mixture, securing with a toothpick if needed.
  5. Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken for 2 minutes per side until lightly golden.
  6. Slice the puff pastry sheet into thin strips.
  7. Wrap the pastry strips around each chicken breast in a crisscross pattern, mummy-style, leaving a small gap near the top for the eyes.
  8. Brush the pastry with egg wash and press two small olive slices into the gap to create the mummy's eyes.
  9. Bake for 20 to 22 minutes until the pastry is golden and the chicken reaches 165°F internally.
  10. Let rest for 5 minutes before serving.

Notes

One sheet of puff pastry wraps both chicken breasts, so the spooky presentation costs barely more than a plain stuffed chicken dinner would.
