No-Bake Candy Eyeball Protein Truffles

Ingredients
  

  • 1/4 cup natural peanut butter
  • 1 scoop vanilla protein powder
  • 1 tbsp honey
  • 1/4 cup white chocolate chips melted
  • 1 tbsp unsweetened almond milk as needed
  • 8 candy eyeball decorations
  • Pinch of salt

Method
 

  1. Add the peanut butter, protein powder, honey, and salt to a mixing bowl.
  2. Stir until a thick dough forms, adding almond milk a teaspoon at a time if too dry.
  3. Roll the mixture into small round balls to form the truffle centers.
  4. Dip each ball into the melted white chocolate, using a fork to lift it out and let the excess drip off.
  5. Place the coated truffles on a parchment-lined tray.
  6. While the white chocolate coating is still wet, press a candy eyeball onto the top of each truffle.
  7. Chill in the fridge for at least 15 minutes until the coating sets firm.
  8. Store leftovers in an airtight container in the fridge.

Notes

A small package of candy eyeball decorations lasts across many batches of truffles, since only one eyeball is needed per bite.
