No-Bake Orange Protein Pumpkin Fudge Bites

Ingredients
  

  • 1/4 cup natural peanut butter
  • 1 scoop vanilla protein powder
  • 2 tbsp honey
  • 1/4 tsp orange food coloring
  • 1/2 tsp pumpkin pie spice
  • 1 tbsp unsweetened almond milk as needed
  • 6 small pretzel sticks broken in half, for stems
  • Pinch of salt

Method
 

  1. Add the peanut butter, protein powder, honey, orange food coloring, pumpkin pie spice, and salt to a mixing bowl.
  2. Stir until a thick, evenly colored orange dough forms, adding almond milk a teaspoon at a time if too dry.
  3. Roll the mixture into small round balls.
  4. Use the side of a toothpick to gently press vertical lines into each ball, running from top to bottom, to mimic a pumpkin's ridges.
  5. Press a small piece of pretzel stick into the top of each ball to create a pumpkin stem.
  6. Place the bites on a plate or tray.
  7. Chill in the fridge for at least 15 minutes to firm up.
  8. Store leftovers in an airtight container in the fridge.

Notes

A handful of pretzel sticks broken in half makes enough pumpkin stems for many batches of this dessert, adding almost nothing to the overall cost.
