Method
- In a bowl, whisk together the mascarpone cheese, Greek yogurt, protein powder, honey, and salt until smooth.
- Quickly dip the broken ladyfinger pieces into the cooled coffee, just enough to moisten without becoming soggy.
- Layer the coffee-soaked ladyfingers into the bottom of two small serving cups.
- Spoon the mascarpone mixture over the ladyfingers, dividing evenly between the cups.
- Dust the tops with unsweetened cocoa powder.
- Chill in the fridge for at least 30 minutes to let the flavors meld.
- Serve cold.
Notes
A small box of ladyfinger cookies lasts across several batches of this dessert, and leftover brewed coffee from the morning pot works perfectly for the soak.
