Protein Chocolate Peanut Butter Cups

Ingredients
  

  • 3 tbsp natural peanut butter
  • 1 scoop chocolate protein powder
  • 1 tbsp honey
  • 2 tbsp unsweetened cocoa powder
  • 3 tbsp unsweetened almond milk divided
  • 1 tbsp mini dark chocolate chips
  • Pinch of salt

Method
 

  1. In a small bowl, mix the peanut butter with 1 tablespoon of almond milk and a pinch of salt until smooth.
  2. Spoon the peanut butter mixture into the bottom of 2 to 3 small silicone muffin cups, spreading into an even layer.
  3. Place in the freezer for 10 minutes to firm up slightly.
  4. In another bowl, whisk together the chocolate protein powder, cocoa powder, honey, and remaining almond milk until smooth and thick.
  5. Spoon the chocolate layer over the firmed peanut butter layer in each cup.
  6. Top with mini dark chocolate chips.
  7. Freeze for at least 1 hour, or until fully set.
  8. Pop out of the silicone cups and serve cold, storing extras in the freezer.
