Method
- In a small bowl, mix the peanut butter with 1 tablespoon of almond milk and a pinch of salt until smooth.
- Spoon the peanut butter mixture into the bottom of 2 to 3 small silicone muffin cups, spreading into an even layer.
- Place in the freezer for 10 minutes to firm up slightly.
- In another bowl, whisk together the chocolate protein powder, cocoa powder, honey, and remaining almond milk until smooth and thick.
- Spoon the chocolate layer over the firmed peanut butter layer in each cup.
- Top with mini dark chocolate chips.
- Freeze for at least 1 hour, or until fully set.
- Pop out of the silicone cups and serve cold, storing extras in the freezer.
