Ingredients
  

  • 1/2 cup rolled oats blended into flour
  • 1 scoop vanilla protein powder
  • 2 tbsp natural peanut butter
  • 1 tbsp honey
  • 2 tbsp unsweetened almond milk as needed
  • 1 tbsp mini dark chocolate chips
  • 1/2 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Blend the rolled oats in a food processor or blender until they form a fine flour.
  2. Add the oat flour, protein powder, peanut butter, honey, vanilla extract, and salt to a mixing bowl.
  3. Stir until a thick cookie dough forms, adding almond milk a teaspoon at a time if too dry.
  4. Fold in the mini chocolate chips.
  5. Roll the mixture into small bite-sized balls.
  6. Place the bites on a plate or tray.
  7. Chill in the fridge for at least 15 minutes to firm up.
  8. Store leftovers in an airtight container in the fridge.

Notes

Blending your own rolled oats into flour costs a fraction of buying almond flour or specialty baking flours, and this batch makes several servings from one round of blending.
