Protein Rice Pudding

Ingredients
  

  • 1/2 cup cooked white rice
  • 3/4 cup unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 1 tbsp honey
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tbsp raisins optional
  • Pinch of salt

Method
 

  1. Add the cooked rice and almond milk to a small saucepan over medium-low heat.
  2. Simmer, stirring occasionally, for 8 to 10 minutes until the mixture thickens slightly.
  3. Remove the pan from the heat and let cool for a few minutes.
  4. Whisk in the protein powder, honey, cinnamon, vanilla extract, and salt until smooth.
  5. Stir in raisins if using.
  6. Spoon into a serving bowl.
  7. Serve warm, or chill in the fridge for a cold rice pudding.

Notes

Use leftover rice from a previous dinner instead of cooking a fresh batch — it turns this dessert into an almost zero-extra-cost way to use up what's already in the fridge.
