Ricotta & Berry Protein Toast

Ingredients
  

  • 2 slices sourdough or whole grain bread
  • 1/2 cup part-skim ricotta cheese
  • 1/2 cup mixed berries fresh or frozen — if frozen, thaw and pat dry
  • 2 tbsp hemp seeds
  • 1 tsp honey
  • 1/4 tsp vanilla extract optional, stir into the ricotta
  • A pinch of cinnamon
  • Pinch of salt

Method
 

  1. Toast the bread slices to your preferred level of crispness.
  2. While the bread toasts, mix the ricotta with the vanilla extract, a pinch of salt, and cinnamon in a small bowl until smooth and creamy.
  3. Spread the ricotta mixture generously and evenly over both slices of toast.
  4. Arrange the mixed berries on top. If using frozen berries, make sure they are fully thawed and excess liquid is patted away to avoid soggy toast.
  5. Sprinkle the hemp seeds evenly over both slices.
  6. Finish with a light drizzle of honey across everything.
  7. Eat immediately while the toast is still warm and crisp.

Notes

Frozen mixed berries cost a fraction of fresh and are nutritionally identical — sometimes superior since they're frozen at peak ripeness. A large bag costs around $3–4 and gives you enough for a full week of breakfasts. Ricotta is one of the most underused budget protein sources; a 475g tub costs about $4 and covers multiple servings across several days. Hemp seeds are an investment upfront but last months and add a meaningful protein boost to anything you sprinkle them on.
