Shrimp Scampi for Two

Ingredients
  

  • 12 oz shrimp peeled and deveined
  • 6 oz linguine or spaghetti
  • 3 tbsp butter divided
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1/4 cup chicken broth
  • 2 tbsp lemon juice
  • 1/4 tsp red pepper flakes
  • 2 tbsp fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. Pat the shrimp dry and season with salt and pepper.
  3. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
  4. Sear the shrimp for 1 to 2 minutes per side until pink and opaque, then remove and set aside.
  5. Add the minced garlic and red pepper flakes to the skillet, cooking for 30 seconds until fragrant.
  6. Pour in the chicken broth and lemon juice, scraping up any browned bits.
  7. Stir in the remaining butter until the sauce turns glossy.
  8. Return the shrimp to the skillet along with the cooked pasta, tossing everything together to coat.
  9. Sprinkle with fresh parsley and serve immediately.

Notes

Buy frozen shrimp in a large bag rather than fresh from the seafood counter — it thaws quickly under cold water and costs noticeably less per pound.
