Sweet Potato & Egg Breakfast Hash

Ingredients
  

  • 1 medium sweet potato diced small
  • 2 large eggs
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1 tbsp fresh chives chopped, optional
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced sweet potato and cook, stirring occasionally, for 10 minutes until tender.
  3. Add the diced onion and bell pepper, cooking for another 4 minutes until softened.
  4. Season with smoked paprika, salt, and pepper.
  5. Push the hash to one side of the skillet and crack the eggs into the empty space.
  6. Cook the eggs to your preferred doneness, 3 to 4 minutes for a runny yolk.
  7. Slide the eggs on top of the hash.
  8. Garnish with fresh chives if using and serve hot.

Notes

Sweet potatoes are cheap year-round and one large potato makes an entire serving of hash — buy a bag and portion them out across several breakfasts.
