Turkey Feather Pumpkin Protein Pancakes

Ingredients
  

  • 1/2 cup rolled oats
  • 1/2 cup canned pumpkin puree
  • 2 large eggs
  • 1 scoop vanilla protein powder
  • 1/2 tsp baking powder
  • 3/4 tsp pumpkin pie spice
  • 1 small banana thinly sliced lengthwise
  • 1/2 cup strawberries thinly sliced
  • 2 mini dark chocolate chips for eyes
  • Pinch of salt

Method
 

  1. Add the rolled oats, pumpkin puree, eggs, protein powder, baking powder, pumpkin pie spice, and salt to a blender.
  2. Blend until a smooth orange batter forms, about 30 seconds.
  3. Heat a non-stick skillet over medium heat.
  4. Pour one larger round of batter for the turkey's body and a smaller round just to the side for the head.
  5. Cook 2 to 3 minutes per side until golden and small bubbles form on the surface, flipping carefully.
  6. Cook another 2 minutes until fully set, then transfer to a plate.
  7. Fan the banana and strawberry slices out behind the larger pancake to create turkey tail feathers.
  8. Press two mini chocolate chips onto the smaller pancake to create the turkey's eyes.
  9. Serve warm, arranged as a festive turkey.

Notes

One banana and a small handful of strawberries create the entire turkey tail, so the festive presentation costs barely more than a plain stack of pumpkin pancakes.
