- Add the rolled oats, pumpkin puree, eggs, protein powder, baking powder, pumpkin pie spice, and salt to a blender.
- Blend until a smooth orange batter forms, about 30 seconds.
- Heat a non-stick skillet over medium heat.
- Pour one larger round of batter for the turkey's body and a smaller round just to the side for the head.
- Cook 2 to 3 minutes per side until golden and small bubbles form on the surface, flipping carefully.
- Cook another 2 minutes until fully set, then transfer to a plate.
- Fan the banana and strawberry slices out behind the larger pancake to create turkey tail feathers.
- Press two mini chocolate chips onto the smaller pancake to create the turkey's eyes.
- Serve warm, arranged as a festive turkey.
Notes
One banana and a small handful of strawberries create the entire turkey tail, so the festive presentation costs barely more than a plain stack of pumpkin pancakes.
