Turkey Meatballs with Marinara over Zucchini Noodles

Ingredients
  

  • 6 oz lean ground turkey
  • 2 tbsp breadcrumbs
  • 1 tbsp grated parmesan cheese plus extra for topping
  • 1 large egg lightly beaten (use half)
  • 1 clove garlic minced
  • 1/2 tsp dried Italian seasoning
  • 1 cup marinara sauce
  • 2 medium zucchini spiralized into noodles
  • 1 tsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, combine ground turkey, breadcrumbs, parmesan, half the beaten egg, garlic, Italian seasoning, salt, and pepper.
  3. Mix gently until just combined, then roll into 6 to 8 meatballs.
  4. Place the meatballs on the baking sheet and bake for 18 to 20 minutes until cooked through.
  5. While the meatballs bake, heat olive oil in a skillet over medium heat.
  6. Add the zucchini noodles and sauté for 2 to 3 minutes until just tender, being careful not to overcook.
  7. Warm the marinara sauce in a small saucepan.
  8. Plate the zucchini noodles and top with the baked meatballs.
  9. Spoon marinara sauce over the top and finish with extra grated parmesan.

Notes

Spiralizing your own zucchini instead of buying pre-made zoodles cuts the cost significantly, and a basic spiralizer or even a vegetable peeler does the job just fine.
