Method
- Season the ribeye generously with salt and pepper on both sides.
- Heat olive oil in a skillet over high heat until shimmering.
- Sear the steak for 3 to 4 minutes per side for medium-rare, adjusting time for your preferred doneness.
- In the last minute of cooking, add 1 tablespoon butter and half the minced garlic to the pan, spooning the garlic butter over the steak as it finishes.
- Remove the steak and let it rest for 5 minutes before slicing.
- In the same skillet, add the pomegranate juice, honey, remaining garlic, and rosemary.
- Simmer for 4 to 5 minutes until the sauce reduces by half and turns syrupy and deep red.
- Stir in the remaining butter until glossy.
- Slice the steak and plate it, drizzling generously with the pomegranate reduction.
- Garnish with fresh pomegranate seeds and serve immediately.

A bottle of pomegranate juice makes several batches of this dramatic sauce, so the striking blood-red drizzle adds real flair for very little added cost.
