Vampire's Garlic Butter Ribeye with Pomegranate Drizzle for Two

Ingredients
  

  • 12 oz ribeye steak
  • 4 cloves garlic minced, divided
  • 3 tbsp butter divided
  • 1 tbsp olive oil
  • 1/2 cup pomegranate juice
  • 1 tsp honey
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp pomegranate seeds for garnish
  • Salt and pepper to taste

Method
 

  1. Season the ribeye generously with salt and pepper on both sides.
  2. Heat olive oil in a skillet over high heat until shimmering.
  3. Sear the steak for 3 to 4 minutes per side for medium-rare, adjusting time for your preferred doneness.
  4. In the last minute of cooking, add 1 tablespoon butter and half the minced garlic to the pan, spooning the garlic butter over the steak as it finishes.
  5. Remove the steak and let it rest for 5 minutes before slicing.
  6. In the same skillet, add the pomegranate juice, honey, remaining garlic, and rosemary.
  7. Simmer for 4 to 5 minutes until the sauce reduces by half and turns syrupy and deep red.
  8. Stir in the remaining butter until glossy.
  9. Slice the steak and plate it, drizzling generously with the pomegranate reduction.
  10. Garnish with fresh pomegranate seeds and serve immediately.

Notes

A bottle of pomegranate juice makes several batches of this dramatic sauce, so the striking blood-red drizzle adds real flair for very little added cost.
