Witch's Broom Steak & Veggie Skewers for Two

Ingredients
  

  • 12 oz sirloin steak cut into cubes
  • 1 zucchini sliced into rounds
  • 1 bell pepper cut into chunks
  • 1 red onion cut into chunks
  • 2 tbsp olive oil divided
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 8 fresh rosemary sprigs for the broom bristles
  • 8 wooden skewers soaked in water
  • Salt and pepper to taste

Method
 

  1. Toss the steak cubes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Toss the zucchini, bell pepper, and red onion with the remaining olive oil, salt, and pepper.
  3. Thread the steak and vegetables onto the skewers, leaving about 2 inches of bare skewer at one end to mimic a broom handle.
  4. Preheat a grill pan or skillet over medium-high heat.
  5. Cook the skewers for 3 to 4 minutes per side, turning occasionally, until the steak reaches your desired doneness and the vegetables are lightly charred.
  6. Gather 3 to 4 rosemary sprigs at the bare end of each skewer and tie loosely with kitchen twine to look like broom bristles.
  7. Arrange the skewers on a platter so they resemble witches' brooms.
  8. Serve immediately.

Notes

Fresh rosemary sprigs are inexpensive and double as both a broom decoration and a fragrant garnish, giving this presentation real flair for almost no added cost.
