- Toss the steak cubes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper.
- Toss the zucchini, bell pepper, and red onion with the remaining olive oil, salt, and pepper.
- Thread the steak and vegetables onto the skewers, leaving about 2 inches of bare skewer at one end to mimic a broom handle.
- Preheat a grill pan or skillet over medium-high heat.
- Cook the skewers for 3 to 4 minutes per side, turning occasionally, until the steak reaches your desired doneness and the vegetables are lightly charred.
- Gather 3 to 4 rosemary sprigs at the bare end of each skewer and tie loosely with kitchen twine to look like broom bristles.
- Arrange the skewers on a platter so they resemble witches' brooms.
- Serve immediately.
Notes
Fresh rosemary sprigs are inexpensive and double as both a broom decoration and a fragrant garnish, giving this presentation real flair for almost no added cost.
