- Season the beef cubes with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Sear the beef in batches for 2 to 3 minutes per side until browned, then set aside.
- Add the onion and garlic to the pot, cooking for 2 minutes until fragrant.
- Sprinkle in the flour and stir for 1 minute to cook out the raw flour taste.
- Stir in the tomato paste and beef broth, scraping up any browned bits from the bottom.
- Return the beef to the pot along with the carrots, potatoes, and thyme.
- Bring to a simmer, then reduce the heat to low and cover.
- Simmer for 25 to 30 minutes, stirring occasionally, until the beef is tender and the stew has thickened.
- Ladle into two dark bowls to resemble bubbling cauldrons and serve hot.
