Ingredients
  

  • 12 oz boneless skinless chicken breast sliced
  • 6 oz fettuccine
  • 1 cup fresh spinach
  • 1/4 cup fresh basil
  • 1 cup half-and-half
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper to taste

Method
 

  1. Cook the fettuccine according to package instructions, then drain and set aside.
  2. Season the sliced chicken with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5 to 6 minutes until golden and cooked through, then set aside.
  4. Add the butter and garlic to the same skillet, cooking for 30 seconds until fragrant.
  5. Add the spinach and basil, cooking for 1 to 2 minutes until wilted.
  6. Transfer the wilted greens and garlic to a blender along with the half-and-half, blending until smooth and vibrant green.
  7. Pour the green sauce back into the skillet and bring to a gentle simmer.
  8. Whisk in the parmesan cheese until the sauce thickens slightly, about 3 minutes.
  9. Toss the cooked fettuccine and chicken in the eerie green sauce until well coated.
  10. Serve immediately.
